Notes
  • used Red Lake Nation Foods Quick Cook Wild Rice & prepared it according to box directions.  So quick, easy, and delicious.
  • Wild Rice: 6 ounces uncooked wild rice = 1 cup cooked wild rice; To cook wild rice, the ratio is 1 cup uncooked wild rice to 3 cups liquid
  • Dry Sherry: I don't usually have alcohol on-hand, so I purchased a small bottle of Dry Cooking Sherry for under $5 for this recipe.  If you don't have Dry Sherry and would prefer not to buy some, you could probably leave it out, replace it with additional broth, or try a substitution - eHow, LiveStrong, and Gourmet Sleuth have lists of non-alcohol & alcohol substitutions for Dry Sherry.
