A creamy and delicious soup that tastes just like Dayton's Boundary Waters Restaurant's Wild Rice Soup. Yumm!

Ingredients
- 6 tablespoons butter
- 1 small onion, chopped
- 1/2 cup flour
- 4 cups chicken broth
- 1 cup whipping cream
- 1/8 cups Dry Sherry
- 1 1/2 cups wild rice, cooked
- 1 teaspoon salt
- 1 teaspoon white pepper
Preparation
- In a large pot, melt butter. Add onion and cook to soften. about 5 minutes.
- Stir in flour and cook 1 minute.
- Add broth and whisk until smooth.
- Add cream and Sherry, whisk until combined. Simmer.
- Add rice, salt, and pepper. and simmer 5 minutes.
- Serve and Enjoy.
Notes
- I used Red Lake Nation Foods Quick Cook Wild Rice & prepared it according to box directions. So quick, easy, and delicious.
- Wild Rice: 6 ounces uncooked wild rice = 1 cup cooked wild rice; To cook wild rice, the ratio is 1 cup uncooked wild rice to 3 cups liquid
- Dry Sherry: I don't usually have alcohol on-hand, so I purchased a small bottle of Dry Cooking Sherry for under $5 for this recipe. If you don't have Dry Sherry and would prefer not to buy some, you could probably leave it out, replace it with additional broth, or try a substitution - eHow, LiveStrong, and Gourmet Sleuth have lists of non-alcohol & alcohol substitutions for Dry Sherry.
